Confetti Cookie Bites

Nothing says “Happy New Year” like confetti, or in this case, confetti cookies. These bite-sized cookies are a slightly altered version of the mini snickerdoodles, with colorful sprinkles on top instead of cinnamon sugar.

Confetti Cookie Bites

Makes 26 cookies (mine were fairly small)

  • 3/4 cup all-purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp cream of tarter
  • 1/4 tsp plus 1/8 tsp baking soda
  • 1/2 cup white granulated sugar
  • 1/2 tsp pure vanilla extract
  • 2 tbsp non-fat milk
  • 1/4 cup Country Crock Light spreadable butter
  • 2 tsp rainbow nonpareil sprinkles for dipping

Preheat oven to 330 F. Line a cookie sheet with parchment paper and set aside.

Combine dry ingredients in a small bowl. In a separate bowl, melt the butter spread and stir in vanilla and milk. Add wet ingredients to dry ingredients. Form small balls and press the top of each ball into a bowl of sprinkles.

For softer cookies, chill the dough balls before cooking. Bake for 8-10 minutes.
